1 - How can I override the delegates?

While an Interactable component is selected, scroll all the way down on the details panel, You will see all the delegates that can be overriden.

2 - How can I access the example content?

Make sure "Show Engine Content" and "Show Plugin Content" are enabled in the content browser settings, you should be able to find the example content in "Engine/Plugins"
